Simple: 4 main ingredients or less, minimal chopping.
Scalable: easy to cook for 5-30 people
Cheap: <£1.50 per person
Here's a few of mine to start you off.
MUSHROOM RISOTTO (Risotto rice, mushrooms, coconut milk)
- Cook risotto (risotto rice, add white wine, gradually add stock and water until mostly cooked, add coconut milk towards end)
- fry mushrooms and add
- optionally: microwave then add peas
- seasoning: salt, pepper, mixed herbs
BEANBURGERS (tinned beans, flour, baps)
- mash tinned beans, keep some of the bean juice, mix in flour
- add spices (and optionally microwave and add a veg like sweetcorn)
- spread over trays and bake.
- chop into squares when done
- serve with buns sauses lettuce and tomatoes etc.
DHALL (onions, red lentils, rice)
- fry onions
- add red lentils and thrice that much water and boil until cooked
- add garlic paste and spices
- whilst cooking cook rice to serve with
- optionally whilst cooking slow fry (caramalise) some onions to serve with.
TOAD IN THE HOLE (sausages, soy milk, flour)
- put vegetable sausages in deep dish in oven with oil
- whisk flour and baking powder into soy milk to make batter, add a herb.
- pour batter over sausages so 70% covered and return to oven
- cook some veg to serve with (eg microwave some green beans)
BEAN CHILI (onions, peppers, tinned beans, tinned tomatoes)
- fry onions and peppers (or carrot)
- optionally add in some other veg like carrot or courgette (these can be done super quick in a food processor).
- add (tinned tomatoes) and tinned beans
- spices and garlic paste or a chilli sauce
- serve with pita breads
(Can also do in the oven)
CHICKPEA CURRY (onions, chickpeas, tinned tomatoes, peanut butter, rice)
- fry onions
- fry/heat chickpeas
- add spices and ginger and garlic paste
- add tinnned tomatoes or coconut milk
- add peanut butter
- also cook some rice to serve with
CREAMY MUSHROOM PASTA (pasta, mushrooms, margarine, soy milk)
- cook pasta
- fry mushrooms, whilst pasta is cooking
- melt some margarine in a hot pan and then mix in soy milk
- drain cooked pasta and mix in mushrooms and sauce
BUTTERNUT SQUASH SOUP (squash, spinich, bread, hummus)
- Put whole butternut squash(es) in oven for like 2 hours
- scoop squash into pan
- add vegetable stock
- optionally add spinach
- serve with roasted bread / toast and hummus
BASIC FAJITAS (onion, peppers, sausages/beans, wraps)
- fry onions and peppers (optional mushrooms) and fajita spices (smoked paprika, garlic paste, etc)
- fry fake meat in another pan with chilli OR heat some beans in a saucepan (can add some stock and spices and slightly mash)
- (optionally blend chickpeas and add oil lemon juice and tahini to make hummus)
- Serve with wraps and stuff (hummus, salad, spinach, etc)
STUFFED PEPPERS (bell peppers, soy mince, peas, cuscus)
- chop the top off bell peppers, take out seeds etc (doesn't need to be perfect), optionally coat in oil, put in oven (upside down?) for up to 25 min
- mix vegan mince (eg soy mince, or lentils maybe from tins) and small veg (eg peas or sweetcorn) and spices and sauces (eg chili and hummus) and heat up mix in microwave or pan.
- add the mix to the peppers then return to oven until cooked
- meanwhile prepare some cuscus to serve with (pour booking water over cuscus, add herbs and sauces like chopped parsley and tomato puree etc)
CHINESE MUSHROOMS NOODLES (noodles, mushrooms, green veg, spring onions)
- if using dried mushrooms, chop them and set to soak
- boil water and cook noodles,
- add sesame oil, soy sauce, syrup, lime juice to noodles and mix in
- fry sesame seeds, mix in with noodles
- fry veg (eg cabbage, broccoli, asparagus, etc) and mix into noodles
- fry mushrooms and mix into noodles
- add chopped spring onions (not cooked) and mix into noodles
- optionally boil or microwave some extra veg (cabbage, broccoli, asparagus, etc) to serve on the side. Optionally fry some onion in soy sauce to serve on the side
LENTIL PASTA BOLOGNESE (onions, lentils, tinned tomatoes, pasta, green veg)
- cook lentils in a pan with water (or vegan mince)
- fry onions, add onions
- add tinned tomatoes
- add spices and herbs etc (garlic paste, chilli, oregano, red wine, olive oil, balsamic vinegar, salt, etc)
- cook pasta to serve with
- microwave or boil some green veg to serve with such a green beans or asparagus.
-optionally serve with garlic bread. To make garlic bread spread margarine and garlic paste into a cook at home baguette.
SAUSAGE & MASH (cheap vege sausages, potatoes, peas / green beans, gravy granules)
- boil potatoes, mash with margarine
- sausages in oven
- microwave / boil green veg
- make gravy. (Optionally add fried onions, red wine, jam, small amount of marmite)
