Very surprised your reaction to number two isn't closer to "no, do not do this, run a mile from any employer encouraging you to break the law, especially for a temporary job". It's not just immigration law, I can't imagine the tax implications here are above board.
That's definitely my view. I would stay far, far away from a job like this. But ultimately I think it is a choice, and I think it was better for the person I was advising to hear it framed that way.
On the second one, you should definitely outright say the risks they’re making you take as described here and ask if there is anyway they can work with you in a visa
